Sounds like a loaded question without enough informationÂ…
Split SQL and Apps servers?
Both on VM?
Accessing a SAN or local storage?
Multiple VM hosts?
Is VM in a HA and DRS setting?
Are the vm guests allowed to v-motion freely?
How is the network configured on the VM?
Are you using best vm-NIC setting?

In general, we have been on ESX and vSphere for 5 years and performance has been very good, but, you do need to setup your environment correctly to optimize all and you get new tools that can backfireÂ…
