Hello Joe,
I installed 8.03 on my 8.00 server. However I DO NOT run the two applications at the same time. I wanted the 8.00 installation intact just in case we had major problem when we went live with 8.03.
You can uninstall 8.00 through control panel, add remove programs. There are seperate installations of Manufacturing system 8.00 and 8.03, so uninstall/remove the Manufacturing Systems 8.00.
