It is currently 8:00 AM CST here. However our Activity Tracking Detail is displaying time 6 hours ahead. Our site is setup for Central Time.
Does anyone know if we need to set any other field or have ideas how this is happening?
We would really like to see these reported accurately.

Looks like you’re getting UTC time. Not sure where to make any adjustment to that. I assumed you would at least get Server time stamps.

We had a similar issue after upgrading to 24.2. I had to restart our app servers (the actual Windows hosts) to fix the time. It was correct on our server but for whatever reason IIS/Epicor was recording the wrong time until we rebooted after the deployment.
I did open a ticket with Epicor but they didn’t know anything and never responded so I closed it.
Have you reviewed your Company Maintenance? There’s a “Time Zone” option there:

In our case this was correct but it was still recording timestamps with the wrong time.

Was also correct
Something between IIS and Epicor was just really messed up. After the OS reboot all was fine.
Site is setup for central time but the company is blank. In our pilot I tried updating Company Maintenance Time Zone and still get +6 hours.
We’re on cloud so I assumed (hoped) this would be cleaned up after any of our past few upgrades.

May have to log a ticket to Epicor unfortunately.
