My 2 cents....make sure the deal is for doing it several times. Once to populate 8.0 so you can convert reports, customize and train people. Then again later to go live. Once more in between would be good too.
Do they also offer any opportunity to clean out the old junk - such as defining some rules for how old to retain data? This "value added" might make even 6.1 to 8.0 worth having them do.
On the other hand.....doing your own migration to 6.1 might help ease people into the differences - especially at the 5.2 and 6.0 stages - and make the magnitude of the leap a little easier on them. And by then 8.x will be stable and performance better (we hope).
Or....skip the conversion and start from scratch (and save the conversion cost altogether). Clean database, opportunity to "fix" coding schemes for master tables probably better performance (at start)....but....no history in that system so retain older server for reference.
