Copy Live VM for use as Test

I figured it out. Everything worked perfect it was me. Forgot to update the DSN to the new server name. That will do it every time.

I think you may need to perform a drop and re-add of your SQL server. I think this link should help you.

When you change the name of the computer that is running SQL Server, the new name is recognized during SQL Server startup. You do not have to run Setup again to reset the computer name.

I was about 90% sure this would not go off without a hitch and I was correct ha ha ha! Took a copy of our Live VM, brought it online network disconnected, ran sysprep on it, booted it renamed it gave it a new IP address. Progress schema holder starts no problem, SQL db has no errors, however trying to start app server getting an authentication error in the logs at the PC level so domain\epicor-dev$ is being denied access. I half expected SQL to be unhappy with this whole endeavor just curious if anyone else has done it that has worked through the issues.
