Custom menu icons

I think you have it right. While it is best practice to preserve the baseresource file, keep in mind to get the client to use your customresource file, you will need to modify the config file so it will use your new file. You can modify the server config file with the ConfigEditor.exe in the Client folder and then use the ClientZipInstaller to include the config file in your deployment zip as well.

Not sure I exactly understand what you are trying to accomplish.

The Resource Editor allows you to change or add new image resouces. Now depending on what type of image resource each is determines WHERE in the application that image shows up. It is best to modify the images attached to MenuCustom3-MenuCustom5 (or other ones if you'd like), as I don't see a way to create new images and indicate what type they would be.
Once you make the change and save, you will need to exit Epicor and log back in for the changes to show up.
Also, keep in mind that the client seems to use the local client copy of the ResourceImages file. I don't know if you instead change the server ResourceImage file, if it updates when you open Epicor again. That isn't detailed in the Guide, may need an Epicor call to understand the mechanics.
