If the laptops have the horsepower the VMware approach is the easiest and most flexible.  Put as much memory as will fit into the Laptop. 

People can do experiments to their heart's content, if they want they can easily "backup" an environment without help from you by just copying the image file.  If things go really south as Vic mentions you just give them a new copy of the image file.

Still need to have the proper number of  licenses for Epicor and any other software in the Vmware image.

I have a few extra laptops and a server available to me.

 

I would like to be able to have each laptop run its own EPICOR instance.  Can I do that with Wins7?  I would like for each laptop to be able to modify its own training DB.  How would I do that?

I'd consider doing it the way that Epicor used to do it:  Use VMware or something similar, create an image, run the image on the laptops… let them blow up the database……then when they're done, restore a clean, fresh copy of the image for the next session.

 

Or I guess you could install the server on each laptop and just restore the training db to each.  I'm not sure which method is better or performs better…

We use this method in our training lab. Speed isn't a huge issue as these are generally people who are walking through a training exercise.
But from IT standpoint, it is very easy to clear and reset our lab when necessary.
