Is there a way to get MRP to exclude specific forecast demand? I know
it can be controlled at the part number level, but can it be done any
other way?
What specific demand do what to exclude? By part? Due date? MRP can
look at three sources for demand forecasting : sales forecasts, Master
production schedule and stocking levels.

You won't be able to track the forecast the individual customer sales orders consumed without using different part numbers. We had the same problem and are moving to the Demand Management Module so that we can either release from a specific contract to a sales order or, release from multiple contracts within the sales order. You can release from a Demand Contract to either a forecast or a sales order. Even when you do that though you will not be able to tie specific sales orders to specific forecasts
