I think to be fair to Epicor on this, what they're essentially doing
is taking the API that they used to build the product internally and are
exposing that same API to their customers. Having managed even smaller
software development projects in the past, I can appreciate the
difficulty. It's a challenge from a documentation and resource
standpoint as well as cultural one (just getting developers to write
comments can be a challenge, much less ones that mere mortals can
understand).
One thing to be aware of is that the client ships with some basic
comments on the BOs in the .XML files you'll find alongside the BO DLLs
in the client directory. If you download the Business Logic tester for
8.03 you can easily consume these comments there. Just open the BO, and
then select View->Class Documentation. It will format the XML comments
with a stylesheet and present it in the browser. These might be an
additional resource to make use of when trying to figure things out.

I have been using ServiceConnect a while now, and there is no doubt
that we find it very useful indeed. However, the lack of information
regarding the webservices is particularly frustrating. I haven't seen
the online course but if its anything like the user guide it will give
you all the background stuff, but will not address what each webservice
does and how you actually use them.
To save your sanity I would suggest that you get some training direct
from Epicor on this.
