Epicor will run on either just fine.
Personally, I prefer VMware. My experience with the MS platform is somewhat
limited, but from what I've seen VMware is easier to setup, tune, maintain,
etc.
While I've never personally had issues with either platform, I hear
complaints about MS now and again and I can't recall the last time I ran
into someone having issues with VMware.
The VMware community is definitely much larger.
