I second the nomination of WireShark.
There's almost *nothing* about network traffic that you wouldn't be able
to see using WireShark. That being said, the strength of WireShark lies
in the filters you apply to capturing traffic and/or the filters you
apply to viewing the captured traffic. There are also a number of ways
you can "connect" WireShark to your network, either on the server's
primary NIC, or on a secondary NIC with no IP address.
For your needs, it sounds like WireShark, installed on the server and
monitoring the server's primary NIC, would show you the data you're
looking for.
I'm not familiar with the TrafMeter product Brian Spolarich suggested,
but a quick glance makes me think it could be applicable to your needs,
too.

I would like to monitor the connection between our users (their IP
address) and our Vantage Server (IP Address). I would like to run this
during the day and when I'm ready be able to see which client IP
Addresses are transferring the most data to the Vantage Server. My
hopes are that this can show us which, if any, client PCs are slowing
down the system and possibly causing a bottleneck.
