Well really you should have taken a backup, but you know that now.

Although you could manipulate the conversion table to make this re run I would not recommend it because you don't know the state the database is in nor if it works will it work next time In a continuous pass.
Without analysing the transaction scopes within the conversion your DB could easily be in an inconsistent state.

So unfortunately I would restart the process and take a backup at key milestones.

The problem is that it will probably run out of memory again. The amount of ram being used suggests that this conversion or the version you are using of it contains a memory leak.

Contact Epicor support and check if any updated versions exist.

Secondly review how much configurator input data you have that you need to keep. It may make sense to purge some especially for things like lost quotes if you have these.

Additionally, anyone know a good way to limit the RAM usage or something else to do in a situation like this to avoid this from happening? I don’t have the ability to switch around the available RAM in the server.
