On the same dialog box where you can pick the signature ... Do you by any
chance have "Use Microsoft Word to edit email" clicked ON ???

Mine is turned off and I have access to the signature options. When I
click ON the MS-Word for editor option my signature options become grayed
out ...

The signature picker button and signature area in my Lookout 2000 is grayed
out. I even resorted to the help function for an answer!

Go to Tools, Options and go to the Signature tab.
