In Exchange Administrator - In Connections - Under Internet Mail tab looks
for the Administrator account setting and to the right is a Notifications
button. Inside there you can selectively decide which types of situaitons
you want to be notified about. As far as I know it is all or nothing rather
than user by user. I have turned off the unknown account option since this
is the most frequent cause of messages.

Can someone tell me how to rid myself of the constant influx of emails an
ex-employee has caused. Apparently, they signed up for a lot of junk using
their company email address. Now that I have deleted their account my admin
account keeps getting them as undeliverable. We are using Exchange 5.5 with
a POP3 client that distributes the emails once they bounce off our web site
host. Do I need to call them to filter this employees address or is there
something I'm missing in Exchange?
