OT: Logging File activity

FileMon (or it's successor, Process Monitor) will show you what's
happening in real-time. If you want to record the activity, you can
configure your server to do so using the "auditing" features of the OS.

NOTE: Auditing is VERY resource intensive. I'm sure there are other,
3rd-party utilities available, but maybe start with what Windows has to
offer and decide if you need more...
