Which also handles any territory assignments and sales tax consequences...

The only time this is really useful is when the only thing that changes is a
dock number.

Does anyone take any extra steps to save the address from a packing
slip? As you probably know if you change an address in the Customer
Ship To, you no longer have a true record of were the shipment was made.
I would like to keep a record of this and I am looking for any
suggestions.

We create additional ship to addresses for the customer, never
changing any. This creates a large list of ship tos but works for us.
