Sounds like you are heading in the right direction...install Ghostscript
and then look into RedMon:

Basically you set up a postscript printer that prints to a redirected port
(RedMon) which feeds that postscript file into Ghostscript and saves it as
a PDF. 100% GPL (free / open source) solution to PDF printing. I suggest
using an Apple postscript print driver for best results. If you have a
Linux server you can even set this up as a network PDF printer so that you
only need to maintain the printer in a single place.
