Restricting access to the Type field on Customer accounts

How do I restrict access to the Customer.CustomerType field in the Customer account? I have sales reps that are changing their prospects to customer and we do not want them to be able to do that.

Make them read only in Extended properties, then either let Epicor do its think, as you quote and order, or create an updateable dashboard to change them.

In addition to @AndyGHA suggestion, you could also put Field Security on it.
