Two Servers with Terminal Services?

You have all of it correct so far. The batch file they are talking about is
your login.bat script that maps your drives.

I am so confused. After reading the Epicor documentation on Terminal
Services, I believe that I need two servers, one to run the Vantage
Software/database and one to run Terminal Services/Progress. Is that
correct? If so, do I install Vantage/Progress/database on one server
and then just Progress, Terminal Services, and some setup on the
Terminal Services Server? Everything I have read seems to start in
the middle or assume something that I apparently do not know.

Currently, we have one server running Windows 2003 Server and is not
setup for Terminal Services yet. We are upgrading to 6.1.

In the documentation I received from Epicor it states "The first step
is to have the server running at Windows 2000 Server." So far, so
good. Continueing, "Also, make sure that each Terminal Services
Client has a batch file mapping them to the Epicor share using the
correct map that the other clients use." I missed something. When
and how was this suppose to happen. What batch file?

Yes - two servers is correct.

One for Vantage - just like always

the Second for running Terminal Services.
Think of the TS as a standard workstation ( A workstation that actually is
many virtual workstations accessed by other workstations).

The batch file referred to is to make sure the Vantage network drive is
mapped properly. Just like a regular workstation - or you could map is
manually and set it to be permanent.
