How does everyone else handle uninstalling an old E10 client since there is no uninstaller for it? Delete the Client folder? I’m sure there is still stuff floating in the registry then however?
The only registry entries I have ever seen with the epicor.exe client is under Microsoft | RADAR (Shows | Microsoft Learn), which is not a part of the installation.
I do see entries for InformationWorker and other Office Add-ins but the client is really an un-intrusive bit of software engineering.

We just delete the client folder and shortcuts from users desktops / start menu.

That is the official process; there isn’t an uninstaller program for the client.
