Update Labor Detail after Capture COS/WIP

I believe that one cannot update labor detail records after running the
Capture COS/WIP activity process. A strange thing I noticed today,
though, is that if I delete a time-entry line from an employee's detail
list, I could then update any of the employee's other detail lines.

So I have two questions:

1) How can I "un-do" the Capture, if necessary, in order to update a
labor detail-record?
2) Why would deleting a time-entry result in being able to update
details?
