You are correct, essentially, a SP or PA is just a giant, fancy, self
executing zip file. A PA only included files that have changed since the
last SP, while a SP contains every single file required to run Vantage.
Technically, if you really needed to, you can actually do an installation of
Vantage by hacking together a minor folder structure, a couple of text
files, and a SP of Vantage. Not reccomended, but it can be done.

From what I've seen, Vantage service pack installs basically modify stuff
under your C:\Epicor\MfgSys803 directory, and doesn't touch anything else
(i.e. OpenEdge). So by running the SP installer, you're loading a bunch of
new server-side files, an updated client, and the scripts to run the
database conversion. That's *all* the installer does, from what I can tell.
Then you run the admin tool and run the db conversion/uplift scripts to
bring your database in-line with the code version.
So if you take a backup of your Epicor directory (xcopy would be the best
and fastest way I think) and your database with everything shut down, you've
effectively got everything in the filesystem you need to bring Vantage back
to where it was before the update.
I haven't touched E9 yet, but the architecture is the same. I would
assume the update process is the same. Nothing outside of the Vantage/E9
directory structure should be involved in an update install (i.e. registry
entries), unless you're upgrading OpenEdge.
If you have to touch OpenEdge, then you'll have to revert either by
uninstalling the OE patch, or reinstalling OE.
But I would assume that OE is backwards-compatible. I've heard you can
run V8 on the E9 version of OE.

Thanks for the advise and I do agree. We are currently not live yet (but
close). So the impact is more of a major inconvenience than a major
problem.
Prior to going live, we will have a testing server to allows us to test
these patches first.
When you say that you take a backup of the Epicor server directory, does
this allow you the ability to just copy it back over in the event
something goes wrong, rather than having in reinstall Epicor back to a
prior version, like I will have to do?
