Use on-hand inventory AND create a job for the difference

You could created a job with two releases.

Release 1: 26 widgets from Stock
Release 2: 49 widgets from a job (Make Direct)

There is a flag to make the release direct to the order.

We are looking to have some overruns with some products that we make.
Any overruns would be placed into inventory. Let's say we have 26
widgets sitting in Inventory.

We just received an order for 75 Widgets. Obviously, we'll need a job
for the difference: 49.

At what point does that On-Hand Quantity meet up with that Sales Order?
How is S/R flagged that those 26 need to belong to that Order?

Anyone have any documentation on this?
