If you are looking for low-code no-code solution then I’d suggest looking at Automation Studio to do this. You would still have to create the recipes.
The first thing you are going to need to do is document all the processes in detail and understand what the triggers for these workflows are going to be. You mentioned you have a third party tool already, then possibly you could connect Automation studio to that and make it the Glue between that application and Epicor.
If however you a looking for more complicated, but less moving pieces involved approach, (thats a bit of an oxymoron… sorryt ) and the third party software has it’s own API. It would be possible to to this with Epicor Functions…
Each method has its own pros and cons.
