Is there a reason why the Undo Checkout feature in the Engineering Workbench does not re-approve a previously approved revision? I feel like if you’re going to undo something, it should go back to its previous state.

Check the setting in Company Configuration (Modules > Materials > Inventory > General tab - ECO section) to see if the checkbox is checked for Unapprove Revision On Check Out. If it is, that is what is happening and you must approve the method then Undo Checkout.
Otherwise, you may want to uncheck the checkbox. Note that if you do that, it will cause anyone checking out a method to unapprove it before they can make changes to it.
We do have that checked and with reason, but I still think an undo should completely undo something whether or not that box is checked.

why not just use approve and check in all?
Because that will save changes.
If you checked out a part and made changes and then you, for whatever reason, decided you didn’t want to commit those an undo would not save them. Approve and checkout would.
I am just telling you the way it works. I agree with your statement, but unfortunately that’s not the way it works.
