I thought about this as well and here is what I did...
first off I made the epicor directory a hidden share.
Also I created a vantage users security (active directory) group, and denied that group the ability to delete. Doing anything else seems to have broken things. Most likeley I could do tighter permission settings per directory, but I figured that those directories are fairly useless and not necessary to secure anyway.
There is also a reports directory that if accessible allows other users to pull other's printed reports, which although a annoying pain I made read only per the vantage user/domain user.
