We're running 9.05.701 on SQL 2012 (Unicode) and haven't run into any issues. We just migrated in March from Progress to SQL and waited for SQL 2012 to do it.
My environment is running all on VM (ESXI 4.1) and I'm giving my app server VM 16 gigs of memory and 4 cpu's and it's hardly ever hit hard except for horrible buggy queries they have built into Epicor that you can see in the SQL Profiler.
The DB vm is running with 16 gigs of memory as well, which SQL will take fully - and 4 cpus.
We're also using SSRS for custom reports (not reports from Epicor), and that's on yet another VM to keep the memory and IIS off of the Epicor DB VM.
