Okay, so in the end I was able to make it over the finish line with the Dragon instructions. They are actually pretty good but I do feel they are missing a few pieces (or at least being vague about some things). This is probably due to me never seeing the Application Studio (or Kinetic for that matter) prior to yesterday.
(Hopefully) tomorrow I am going to go through the process again and as I do I will add more screenshots to the Dragon instructions to supplement them for those come after.

As promised for those who come after.
Impressive for having very little App Studio experience! A couple notes:
• I prefer the Grid Guided Setup rather than manual to add a new data view
• Server Paging is not recommended unless you expect a lot of results (>5,000). Server paging returns 500 (default) rows at a time. Then you have to click the download icon to get 500 more. When it’s turned off, results are virtualized, loading more as you scroll.
