The receipt quantity drops to zero because none have been completed on
the job. The receipt quantity would usually equal the completed

According to Epicor, a job is live to scheduling and capacity until
closed- not just completed. The receipt quantity drops to 0, but it
is still considered "live" until it is closed.
Hope this helps!
