Is there anything special we have to do to send emails from EPICOR?
I see that currently in Epicor, we use the SMTP and port, but we are close to removing the on premise server and need to verify we can send emails from epicor.

Does Office365 have a SMTP address you can point Epicor to? I used to be at a company that used Gogole’s competing Google Apps and I was able to setup a SMTP gateway to use.
Also, if you have any MFP copier/printers that scan-to-email they may be impacted too.
Pretty standard setup. Just make sure you have an account specified that is a valid mailbox. If you change the port to 587 just make sure your firewall / filtering rules don’t block you.
Good point on the printers.
