Prepayment on orders yet to come

Hi all, I’m looking for a little guidance or suggestions on how to handle a request from our sales and finance teams.
We have a new customer that will be placing a series of orders with us over the next 12 months. The customer is going to give us a payment as a deposit against all these future orders. For example, they will give us a check for X dollars. Then in a few weeks they will place an order a portion of that original payment will be used to pay for this order. Then in another month we get a second order, and a portion of that original payment will be used to pay for the second order and so on until the original payment is down to zero.
Does anyone have this happen in their company and if so, how do you manage it?
