Depending on your version...
I would recommend the BAM, watch for changes to fields you are interested in
and (using a .p program) export them to a CSV file.
I have not looked to see if BAM addresses all of the tables you are
interested it, but it would be worth a look.

Since Vantage is already capturing this information realtime when you
activate the changelog, why can't you just pull the data from the
changelog table?
