Where can I find user manuals and/or are they even available to see what features we have access to?

EpicWeb is just an Epicor Website with resources for customers, etc.

You do need credentials to sign-in. I would assume your consultant or CAM (Customer Account Manager) can provide this to you if they haven’t already.

It is just a website, maybe access it from a different computer. Also, in additional to the user guides are techinical guides, which I am finding more useful now. When we signed on both our consultants and epicor sent us credentials for the various sites.
