I took the Application Studio certification exam and encountered questions unrelated to the course content, such as those on Epicor Functions. Are there any additional materials I should study to increase my chances of passing the exam?
You should be looking at the exam guide to know the material.
pages 4 and 5 have detailed table of content you should study for this exam.
Despite that, I encountered over 10 questions out of 35 that were not covered in the course, including those related to Epicor functions. I would like to know if there are any additional materials or courses that cover 100% of the exam questions, or if self-study is necessary for topics outside the existing course.
I think if you steep yourself in the following documents, you’ll be fine.

Assuming you have epicweb, go to education site and navigate to the Classic training material.
There you can find more resources about REST API and Epicor Functions.
Also, don’t forget to go into Application Studio and check the Help, there is a lot of material about most of the functionality. And follow the workshops, that will definitely help.
