There is nothing in the out-of-the-box Sales Order process about CofCs… and honestly, no two companies I’ve ever implemented do CofCs the same way anyway.
Depending on your industry/regulatory structure/quality temperament, you can do as little as adding a boilerplate blurb on all your packslips, or (as in a company I worked for once) have a single person manually gather and sign off every single shipment.
