It's been awhile and my memory is a bit foggy but, I think you can turn on auditing for the executable files that you want to monitor. You can audit file opens, reads, copies, etc. This will write to your event log. I can't remember if you can set this up on your server to audit files on your workstations or not, you may have to set it up on the workstations themselves. Hope this helps..
