User-Defined Fields

If you are only using a handful of std table ud fields, just keep a list of what they are (and represent) in an excel sheet (or something equally handy).

If you are extensively using std table ud fields, you might want to consider using one or more of the UD tables available in Vantage to keep track of how you are using them. Create yourself a maintenance app to keep it current and you'll be set.
