Much thanks to all of you!
We had mapped the target table PartMtl to Source Table EcoMtl, but to
re-use the data in the custom fields within the Engineering Workbench,
we also had to map the Target Table as EcoMtl and the Source Table as
PartMtl. - (a double mapping).
Thanks again - you saved us the wait for a "bug" write-up - answering a
question that Tec h Support could not.

This stumped me too!
Here is what we did.
Under 'System Maintenance', 'Utilities', 'Custom Field Map'
Select the appropriate tables (ensure you are clear on the difference
between source and target).
In our case we looked at Target Table - PartMtl, Source Table - EcoMtl
and matched up Character01 on each.
This links up the Character01 UDF between the tables. You must also do
this to the JobMtl table if you want it to be called in properly to
jobs.
