APR adding in name for some contacts

Has anyone seen this before. I was just notified that an email did not go to one of our suppliers. Looking in the System Monitor, the contact email is also getting their name added in. As an example:

jdoe@email.com;John Doe

Looking into more records, it is happening on a few but not all. The only thing I can think of is that it appears to be happening to a newly started employee only. Our system is set up with a generic email account and I have given the generic email account the ability to send as through exchange. Is there any way it could be picking up some default behavior from the user?

Edit: Looking into it more, a PO was emailed fine at about 9:30 this morning but an email about an hour later to the same contact had the name added like above.
