We've had two databases of 3.0, one of 4.0, and two of 5.0 running all at the same time on the same server without any noticable performance problem. (Dual 450Mhz server with 512MB Ram).
What you WILL want to do is only set up the test databases for two or three users, and allocate memory to the main database using the -B paramter in it's command line (or in Progress Explorer if you are using that).
Currently we have three 5.0 databases and one 5.1 database running and active on our server. I have one database each of 5.0 and 5.1 running on my laptop as I write.

During the initial install of Vantage and Progress software for a NEW version, you will have to reboot your server twice (once for Progress, then once again for the progress patch). After the software is installed, you shouldn't have to reboot your computer to convert your old database to a new version. Also, we've gone for weeks without needing to reboot - although we do from time to time just to clean things up.
